Rosie’s Jam Biscuits Recipe

Inspired by her appreciation for heritage and craft, Rosie brings that same care to her kitchen with her delicious jam biscuits recipe - perfectly simple, lovingly made, and full of charm.
Jam Biscuits
175g US butter, softened at room temperature
150g caster sugar
1 egg, at room temp
2 tsp vanilla extract
275g plain flour
1/2 tsp baking powder
Pinch fine salt
Flour for rolling out
Jam to sandwich the cookies
Icing sugar
Cream the butter and sugar together using an electric whisk or stand mix for a couple of minutes until fully combined, then add the egg and vanilla, beating again to combine.
Carefully add the flour, baking powder and salt and beat to combine thoroughly. The dough should come together into a soft ball at this point. Wrap in cling film and leave to chill in the fridge for a couple of hours.
Preheat the oven to 180C/160C Fan. Line a baking tray with parchment.
Lightly dust your worksurface and rolling pin with flour and roll the dough to about 1/2cm thick. Cut into square shapes, then use a small cookie cutter of your choice to cut out shapes in every second cookie.
Bake for 10-15 minutes, until golden, then leave to cool fully.
Sandwich the two halves together with a generous dollop of jam, pile on a plate and sprinkle with icing sugar.
